VARIETIES

Binkley Apples carries both the staple apple varieties you would expect, as well as some of the more sought after varieties such as the Red Prince apple. Our northern microclimate on the shores of Georgian Bay gives us an advantage over more southerly producers thanks to cold nights and warm days. You will find that we achieve excellent colouration and taste, with more blush on apples such as the Honeycrisp.

Ambrosia
The shape of a Golden Delicious, a reddish-orange colouration, and dense, low-acid flesh. Best eaten fresh and in salads. Available from late August to early December

Cortland
A large, round apple with reddish-orange vertical stripes over pale yellow, with crisp white flesh. Best in salads, pies and baked. Available from mid-September to the end of January

Crispin/Mutsu
A cross between a Golden Delicious and a Japanese Indo, yellowish-green, with a crisp bite. Best eaten fresh, in salads, pies, as applesauce, and baked. Available from mid-September to early May

Empire
A cross between a McIntosh and a Red Delicious, medium sized, with firm, cream-coloured flesh. Best eaten fresh, in salads, and as applesauce. Available from mid-September to July

Gala
A cross between a Golden Delicious and a Kidd's Orange Red, medium sized, with cream or yellow-coloured flesh. Best eaten fresh and in salads. Available from late August to late January

Golden Delicious
A medium to large apple with a broad, conical shape and crisp, white flesh. Best eaten fresh, in pies, as applesauce, and baked. Available from early September to May

Honeycrisp
Large, slightly conical, with a 50% - 90% red blush over a pale green background and sweet, crunchy flesh. Best eaten fresh. Available from September to December

Idared
A cross between a Jonathan and a Wagener, medium to large, with tart, juicy white flesh. Best eaten fresh, in pies, as applesauce, and baked. Available from late October to June

Jerseymac
An early strain of the McIntosh, bright red over yellow, and harvested in August. Best eaten fresh, in salads, pies, as applesauce, and baked. Available from early August to mid-September

McIntosh
A medium apple with an irregular round shape and white flesh that ranges from tart to sweet. Best eaten fresh, in salads, pies, as applesauce, and baked. Available from mid-September to May

Northern Spy
Large and round, green with vertical segments of red and crisp, white, tart flesh. Best in pies, as apple sauce, and baked. Available from mid-September to late February

Paulared
Medium to large, irregularly round, deep red with patches of yellow, a dusty sheen and firm white flesh. Best eaten fresh, in salads, and as applesauce. Available from late August to mid-September

Red Delicious
Medium to large, long and tapered, bright to dark red and sweet, with little acidity. Best eaten fresh. Available from mid-December to late May

Red Prince Exclusive to Binkley Apples
A cross between Jonathan and Golden Delicious, Red Prince has a tangy-sweet flavour with a crunchy, juicy bite. Best eaten fresh, in salads, pies, as applesauce, and baked. Available from January until early summer

Russet
A medium apple of pale to medium green with a fine netting of tan 'russeting' and thick, tangy, sweet flesh. Best eaten fresh, in pies, and as applesauce. Available from mid-October to late January

Spartan
A cross between a Newton and a McIntosh, medium with an irregular round shape and snow-white, crispy flesh. Best eaten fresh, in pies, and as applesauce. Available from mid-October to late January
